ENCHILADA SUIZA




Ingredients:
Green salsa (salsa verde) [recipe to follow]
shredded cooked chicken
sliced onion
cilantro
tortillas (I used Trader Joe's flour)
sour cream 

Green Salsa recipe (you can use store bought, but why?  If you can boil water you can make this)
Ingredients:
about 8 medium tomatillos
2 jalapenos or if you like hotter food, 2 serano peppers-  stems removed and halved length wise
1 medium onion
3-4 cloves of garlic
1/2 cup cilantro leaves
Juice of one lime
2 tsp salt
1 tsp pepper

Directions:
Bring a pot of water to a boil.  Add tomatillos, peppers, garlic, and onion.  Let cook until the tomatillos turn a darker green and the onions are a bit soft.  Once cooked, pour it all in a strainer.  Put the cooked ingredients into a blender (you can use an immersion blender in a bowl too) and blend until the mixture is chunky.  Once blended add the cilantro, lime, salt and pepper.  That's it!  Salsa made!  

Construction your enchilada

1.  Lightly heat the tortilla in a dry skillet (or don't, no biggie)
2.  Add shredded chicken to fit your macros.   I need a LOT of protein so I add 8 ounces.
3.  Pour on a LOT of the green salsa.  This stuff would make a shoe taste good.  It is low calorie, low carb, low everything.  It does have vitamin C!  I don't even count this in my macros.
4.  Add Feta cheese to fit your macros.  I add 1-2 ounces depending on the day.
5.  Add sour cream to fit your macros.  
6.  Top with lots of raw onion slices and fresh cilantro.  


This is a tomatillo!
